We love a butter soft medium rare salmon around here. Hell, we love any kind of salmon, but this is a melt-in-your mouth sensation. A mix of herby and tangy flavors, with a mild bite of almost pickled red onions. Not only is it easy but it’s a Lovely way to snuggle into fall, so do right and try it out .
{recipe.}
🌀preheat oven to 350 deg. cut a lemon in half and save half to sprinkle over the dish.
🌀cut the other half into super thin slices.
salt and pepper the salmon (1.5-2lbs.) and place on a sheet to bake.
meanwhile, slice a small red onion into thin rings and heat a half stick of butter in a skillet right before browning. Add a good olive oil (2.5 TBSP) onion and lemon slices.
🌀cook all slices for up to 5 minutes, then add capers and cook for another 2-3minutes. season with salt and pepper and remove from heat.
🌀slather the salmon with butter sauce and place in the oven to bake. Start checking after 10minutes for your preferred doneness.
🌀remove from oven and let sit for a minute or 2, then garnish with lots of dill, a healthy lemon squeeze, salt and pepper. feel free to add more onion slices.
