How about a damn good Salmon Frittata !
Breakfast, Brunch, Lunch or if you’re like me ‘Eggs Anytime’ is your preference! Either way any time of day this dish is a delicious

🌀Preheat the oven to 400°F.
🌀Add 6-8 eggs, 1/4c cream, handful dill, handful scallions, 1/2t salt and pepper to a mixing bowl; whisk them until everything is well blended; set aside.
🌀Heat the oil in skillet over moderate heat. Add 1/2c tomatoes, small thinly sliced red onion. Sauté 3-5 minutes, remove from heat and evenly spread out cooked veggies across skillet. Sprinkle 1c feta cheese over the sautéed veggies and let melt a bit. Pour egg mixture all over the veggies and cheese; slightly tilt the pan to make sure the eggs settle over all the veggies. Tear bite-sized pieces of thinly sliced smoked salmon and gently place them into the egg, even coverage. Place into oven and let bake for 13-15 minutes, or until the edges have browned a bit. Let set for about five minutes before serving.
