smashed avocado toast, topped with a perfectly poached egg.

in this post I'm going to focus solely on the avo spread and assembly of this easy but incredible breakfast (can be eaten at any time, quite honestly) open faced sandwich, and less on how I poach my eggs. maybe in the very near future I'll do 'eggs 4 ways' and then I'll reveal some of my most coveted egg making secrets 🤣.

but back to the avocado at hand, this recipe is one that I tinker with often but I feel like I've finally fine tuned it enough to accommodate for everyones tastes. the kink of it all is the grilled San Francisco sourdough bread, oh my Jesus, it really elevates the combination of flavors and textures. I get mine from my favorite farmers market here in NYC but a traditional sourdough loaf can work well all the same, just don't forget to oil it down and grill your slices if you can. enough jibber jabber, lets get on with the show...

lemon (1/2)

flaky sea salt ( Maldon is my fav)

sourdough loaf

tajin


ingredients I assume you have on hand

good evoo

rpf (this is how I will refer to Red pepper flakes, moving forward 🤪)



🌀preheat and oil your grill or grill pan. cut sourdough loaf into as many slices as you plan to eat [ some sliced for snacking never hurt a single soul ] and prepare to poach your egg.

🌀while waiting for the water to boil and poaching to commence, you can use this opportunity to crack open a ripe avocado, cut, smash up and season it. mix in 1/4 tsp of rpf, a 1/4 tsp lemon zest, a hardy squeeze of 1/2 a lemon and two pinches of flaky sea salt [ or regular sea salt to taste ] then set aside.

🌀your bread should be grilled or toasted by now and ready to be lightly oiled and draped in the avocado. spread over as much or as little of the avo mixture as you see fit [ more is always more for me! ] another modest evoo drizzle and pinch of salt.

🌀lay your poached egg over the avocado slice and puncture it for that beautiful oozy yolk effect, that I absolutely live for!

🌀sprinkle some tajin over the eggs and if you're up for it another LIGHT drizzle of evoo.

🌀lastly, enjoy the hell out it!
