spicy shrimp scampi.
hello again, here we are with what is technically the fourth "quickie fake fancy" bka QFF dishes, but since I made no reference to it in the last two posts we'll site this as the second recipe in the series. for those who haven't seen the previous posts, QFF = fresh, light-ish, very low maintenance, simple, delicious, in some cases mostly just assembly but all the same, still allows for the prepare to have airs about them 💁🏼♀️. It's mostly just easy warm weather recipes to be paired with great wines or sparkling apple ciders. 🤣

this recipe, very similar to my clams in white wine sauce is the most fabulous 15 minutes of your life. a dish so elegant but one that takes absolutely no effort to execute. pairs well with a warm and sunny day on your patio or fire escape, enjoying a gorgeous white wine to keep you company. like anything made w/ white wine sauces, its incredible over your pasta of choice or just as great for dipping in crusty bread. dealers choice and both are immaculate.
Next time I make this dish I will toast up some panko breadcrumbs with extra parsley (instead of just adding extra at the end),for added flavor and texture.

(serves 2)
grocery list
shrimp - 1-2lbs extra large (peeled and deveined, tails on)
fresno chile - 1-2 (depending heat preference - thinly sliced)
white wine - 1/2C (something you would drink)
loaf crusty bread - I used ciabatta
things I assume you have on hand
garlic - 4 cloves (minced or thinly sliced)
evoo - 2TB (more for drizzling over at the end)
butter - 2TB
s&p - to taste & garnish
RPF - 1/4tsp (more for garnish)
lemon - 1 (half squeezed in pan, half for finishing)
parsley - 1/3C (half added to pan, half for garnish)
flakey salt - sprinkle for garnish
subs.
wine - chicken or veggie broth
bread - pasta of your choice
method.
🌀in a reasonably sized skillet, melt butter and olive oil. add garlic and chile until just fragrant, followed by wine, s&p and RPF.
🌀simmer and reduce by half (about 2min)
🌀add shrimp and sauce for another 3-4 minutes, stir in parsley and lemon juice.
🌀check for seasoning and be sure to remove when shrimp are just pink. shrimp should look like "C" not "U" or "O".
🌀serve over pasta or crusty loaf bread and enjoy.
