an exquisite marriage of a chimi ribeye to creamy garlicky shrimp, but make it a sandwich. - a true land meets sea love story.
I daydreamed of how this sandwich would taste as I was creating the recipe. As I do with most dishes, I looked to hit all five flavor senses, always chasing the UMAMI dragon. & Lemme tell you kids, I struck gold with this one, some of my best work to date every one who sampled it enjoyed it ... thoroughly. can't stress that enough.

Like the fate of the universe depends on it. [ insert infinity gauntlet here. ]
surf & turf sammie.
semolina - loaf ( cut into sub or hero sized slices )
ribeye steak - 1.5 - 2 inches thick
shrimp - extra large 1/4 -1/2 lb. (cleaned and deveined - remove tails just before sammie assembly)
white wine - 1/4C
heavy cream - 3/4C
parmesan - 1/4C
parsley - finey chopped
chives - finely chopped (garnish)
fresh herbs - thyme, rosemary - both
things I assume you have on hand
homemade chimichurri - thassa whole other story ( If requested I'll share. )
garlic - 5 cloves ( 3minced for shrimp, 2whole for basting ribeye )
butter - 5TB ( 3TB for ribeye, 2TB for shrimp )
neutral oil - vegetable, canola etc.
s & p
semolina- baguette, ciabatta, or deli roll or hero
ribeye- strip steak
white wine- chicken stock
chipotle mayo- reg mayo, chili sauce mixed mayo or an aioli, if you're fancy!
sunflower sprouts- any other sprouts, shoots or arugula and any other greens.
🌀having let your emphatically seasoned (with s&p) steak rest for at least a half hour before cooking, turn your cast iron or heavy bottom pan on very high until it starts smoking.
🌀squeeze or drizzle in a generous amount of oil then place your steak into the pan, you want to hear that aggressive sizzle or the pan is not hot enough. sear meat for 3-4 minutes or until a deep brown crust begins to form. - this is for a medium rare-medium vibe.
🌀have your butter, garlic and herbs handy ready to toss in the pan immediately after you flip the steak. the moment the butter is melted begin basting ribeye continuously for at least one minute and no more than 2.
🌀relocate ribeye to a cutting board, pour over garlic herb butter sauce and loosely cover with foil - let rest up to 8minutes.
🌀while steak rests, toast or grill bread and cook creamy garlicky shrimp.
🌀add 1TB of butter to the pan and slightly cook the lightly salted shrimp, you want them to just turn pink then set aside.
🌀 add remaining TB of butter and minced garlic to the pan set to a high heat, cook for 1 minute then pour in white wine. let reduce, and stir in heavy cream until combined.
🌀grate in parmesan, stirring continuously so cheese doesn't clump or stick to pan.
🌀add shrimp back in and sprinkle in a heap handful of chopped parsley. stir and remove from heat.
🌀uncover ribeye and slice against the grain.
🌀assembly time - toasted bread
chipotle mayo - spread on both sides
sunflower sprouts - make a good bed
ribeye slices - length of the bread
chimichurri sauce - spoon over steak
creamy shrimp - place atop the meat
cream sauce - spoon over shrimp
chives - heavy handed sprinkle
🌀cut sandwich width wise and show that sexy ass cross section to the camera or the family & that be that!
