the best heirloom tomato salad ever.

now lets be very clear, I do not use that phrase lightly. this isn't click bait, I've cracked the code on the best damn tomato salad EVER! [insert eyebrow raising gif] 😌. and if you try it and don't like it I'll accept that as a complete and utter lie 🤣.

it's giving umami levels of flavor, although, if I had it to do it again (which I damn well will) I would add a little bit more heat to it, make it a little more picante 🌶️ . Maybe a couple of dashes of tabasco to give it a little smokey moment 🫠. those who know me well know that I'll die about some tomatoes, they are my absolutely favorite thing to consume in any form, so I'm very passionate about eating and tweaking a bomb ass tom-sal (that's what we're calling it henceforth). so here it is, I present to you my 'piece de resistance' (well one of them certainly my top 3).


the best heirloom tomato salad EVER!

(serves 2, 1 if you're greedy)



grocery list & things you should've on hand.


dressing

rice wine vinegar - 3TB

mirin - 2TB

garlic - 1clove (minced)

RPF - pinch

dill - 2TB (chopped)

parsley - 1TB (chopped)

lemon - 1/2 (squeezed)

s&p - to taste


salad

heirloom tomatoes - 3 (assorted colors and sizes sliced)

grape tomatoes - 8 (halved)

bocconcini - 5-6 (quartered)

castelvetrano olives - 1/4C (pitted and smashed)

capers - 1TB

anchovies - 2 (thinly sliced)

s&p - to taste



method.

🌀before you slice and smash your salad ingreeds prepare the dressing - add all dressing ingredients into a bowl stirring frequently and adjust seasoning to taste. cover and place in the fridge until ready to pour.

🌀slice toms and anchovies, smash and pit olives, quarter bocconcini and assemble them on a serving dish or plate. - first layer being the heirloom tomatoes followed by the grape toms. sprinkle over olives and capers and place sliced anchovies freely over your base. lastly, nestle in bocconcini into any spots they can fit in. season with salt and pepper to taste before pouring over the dressing.

🌀serve & enjoy! try to place all ingredients on one tomato for the ultimate bite.
