zesty shrimp loaded baked potato.

this is one of those dishes forged in the middle of (what was believed to be...) an at home food shortage. POV: you've looked around the kitchen and while yes, you may have a bevy of groceries or potential ingredients, nothing automatically clicks as a whole dish/recipe to make 🥴 born was this shrimp loaded baked potato. it's 'last action hero' packed with flavor plus its limey and medium-ish spicy, you've got your carbs and the toppings bring the whole thing home. look at us, making lemonade out of lemons, or in this case an 'everything in the fridge' loaded potato!

zesty shrimp loaded baked potato.

(serves 2ish, 3 if you get an extra pot(ato))

grocery list

shrimp - medium 1/2 lb (cleaned and deveined)

chicken stock - 3/4C

green onions/scallions - 3 thinly sliced greens and whites

lime - 2/3C juiced

cilantro - 1/3C


butter - 1-2 tabs

green onion - 1sliced

cheddar cheese - 2C shredded (white or yellow dealers choice)

sour cream - dollop (optional)

jalapeño - thinly sliced (optional)

*any toppings for your pots that you like or have

things you should have on hand - if not, obviously add them to your grocery list.

olive oil - 2TB

garlic - 2-3 cloves minced

AP flour - 1TB

RPF - 1tsp.

S&P - to your taste

butter - 1/4C


the pots.

🌀preheat oven to 425 deg. in the meantime prick pots w/ a fork all over - this allows the steam to be released so your pots don't pop!

🌀to hasten up the baking process, give the pot 5min in the micro. If you don't have one just add about 50-55min extra minutes onto your baking time.

🌀either way, after they've been in the micro or if you skipped that step, be sure to douse them in olive oil then season thickly with s&p.

🌀place in the oven, directly on the rack for 55 minutes (about 2 hours if you didn't micro ahead of baking).

the shrimp.

🌀in a bowl season shrimp w/ flour, salt & RPF, toss til coated.

🌀in a large skillet melt butter, add green onions, garlic and cook stirring constantly for 2 minutes.

🌀add shrimp to pan then cook for another 2 min. pour in broth and lime juice, sauté until sauce has thickened and stir in cilantro.

the assembly.

🌀remove potato from oven and slice the top open - down the middle and give it a squish to puff out the innards.

🌀add tabs of butter and sprinkle w/ salt.

🌀stuff the potato w/ cheese, shrimp mixture and top w/ hearty dollops of sour cream, green onion and jalapeño.

Cut that big boy in quarters and enjoy!
